For most cases, choose MP4: it's the most compatible format and any phone, TV, editor or social network plays it without issues. MKV is only worth it in specific cases —4K video with modern codecs (VP9/AV1) or files with multiple audio and subtitle tracks— because it supports things MP4 doesn't, at the cost of being less compatible with older devices and apps.

When to choose MP4

Choose MP4 if you're going to watch the video on your phone, upload it to social networks, edit it in CapCut or another editor, or you simply want it to work anywhere without thinking. When to choose MKV

Choose MKV only if you're downloading in 4K with modern codecs (many 4K videos use VP9 or AV1, which MP4 doesn't always support by direct copy) or if you need to keep multiple audio or subtitle tracks in a single file. Is MP4 or MKV better?

Can I upload an MKV to Instagram or YouTube?

Not directly: social networks expect MP4. If you have an MKV and want to upload it, you'll have to convert it to MP4 first. That's why, if the destination is a social network, download directly in MP4.
